Everybody knows somebody who lives at the smoker. They talk about bark, they own more thermometers than oven mitts, and they're impossible to shop for because they already have every gadget. Here's the good news: nobody who cooks has ever had too much good sauce and rub. Gear wears out. Seasoning gets used up, and that's what makes it a good gift. This is our short, honest guide to BBQ gifts from the BigShow BBQ pit in Kansas City. It covers two kits, who each one fits, and how to get free shipping on both.
Why a kit beats a single bottle
Hand somebody one bottle of sauce and you're guessing their taste. Hand them three and they get to find their favorite. That's how we eat at home, too. There's a classic bottle, a sweet-heat bottle and a smoky bottle on the table, and everybody picks their lane.A kit also takes the guesswork off you. You don't need to know if your brother-in-law likes heat or if your neighbor only grills chicken. Each of our kits covers a few different cooks, so whoever opens it has something to make that weekend.
The KC Complete Sauce Kit ($28)
The KC Complete Sauce Kit is our house sauces in one box:

KC Mild BBQ Sauce (12 oz bottle): classic Kansas City sweet and tang, not syrupy, with near-zero heat. This is the bottle for the whole family table.

Honey Jalapeño Grilling Glaze (14.4 oz glass bottle): honey first, then jalapeño warmth. It's a finishing glaze for chicken, wings and ribs.

KC Hickory BBQ Sauce (12 oz bottle): the same KC backbone with a louder hickory note. It's built for brisket sandwiches, burnt ends, beans, and burgers off the grill when there wasn't time for a long smoke.

Good fit for: the person who grills more than they smoke, the KC transplant who misses home, and anybody who says "I'll just grab a bottle at the store" every single cookout. Want to know which bottle does what? Point them to our Mild vs Hickory vs Spicy sauce comparison.
The KC Complete Rub Kit ($36)
The KC Complete Rub Kit is three 12 oz shakers, each with its own job:

KC Que: salty, sweet and savory. It's our all-purpose bark rub for ribs, pork shoulder, steaks and potatoes.

KC Bold & Gold: garlic leads. It's savory and herby, and it's great on chicken, beef, seafood and veggies. It even works on popcorn.

KC Sweet & Spicy: sweet and savory up front with a real kick on the back end. Use it for wings, spicy ribs and burnt ends.

Good fit for: the new smoker who just unboxed a pellet grill, the backyard cook who still mixes salt and pepper in a coffee mug, and the person who swears they don't like sweet rubs. Hand that one the Bold & Gold first. If they want a cheat sheet, our guide to which BigShow rub to use on ribs, chicken, or veggies lays it out protein by protein.
Both kits: $64, ships free
Here's the math that makes the decision easy. The Sauce Kit ($28) plus the Rub Kit ($36) comes to $64. We offer free shipping on orders $50 and up in the continental U.S., so the pair ships free. That gets you six products, rub and finish, ready for a full Kansas City cook. It's the gift we'd want under the tree ourselves. Here's a quick cheat sheet:

"They just bought their first smoker." Get the Rub Kit. Rub is the first thing a new smoker needs, and three profiles let them learn what they like.

"They mostly grill chicken and burgers." Get the Sauce Kit. Honey Jalapeño on thighs and Hickory on burgers will cover a lot of weeknights.

"They grew up in Kansas City." Get both. They'll know the difference between a sauce with real tang and a grocery-store syrup.

"They host every holiday and game day." Get both, no question. Our Backyard KC Cook game plan shows how to run ribs, chicken and veggies off the two kits.

"They hate spicy." Lead with KC Mild and KC Que. Both keep the heat low and let the flavor do the work.

Make it a gift, not just a box
A couple of easy touches go a long way:

Write the first cook on the card. Something like: "Que on ribs, Mild in the last 10–15 minutes after the bark sets." Now it's an invitation, not just seasoning.

Add the chicken plan. Bold & Gold on thighs, then Honey Jalapeño brushed on near the end. Our Honey Jalapeño chicken glaze how-to walks through it step by step, timing included.

Promise to show up hungry. The best part of giving BBQ is getting invited to eat it.

A quick allergen note
If you're shopping for someone with food allergies, check before you buy. Full allergen details are listed on each product page.
Order timing
Order by December 18 for delivery before Christmas.
From our pit to theirs
BigShow BBQ was founded by BigShow Joe and is carried on by BP, and we're proud to be a 2026 Hometown Voices Award recipient. Holiday BBQ Gift Guide: Kansas City Sauce and Rub Kits for Smokers and KC Fans

Ask a room full of backyard cooks about Kansas City sauce and somebody will say, "Too sweet." We get it. A lot of what sits on grocery shelves under a "KC-style" label is thick, heavy and sticky enough to hide whatever you smoked under it.That's not the Kansas City sauce we grew up on, and it's not what we put on our ribs at ribfests and cook-offs. Real KC sauce has sweetness, sure, but it also has tang and a little bite. When the balance is right, the sauce brings the meat forward instead of burying it.This post covers what "too sweet" usually means, how sweet and tangy work together, and how to glaze so your sauce sets glossy instead of turning to syrup.
What "too sweet" usually means
When folks say a sauce is too sweet, they usually mean one of three things:

The sauce is all sweetness with nothing to balance it. No vinegar, no tang, nothing to cut through rich pork.

There's too much sauce. A great sauce slathered on thick will still taste like candy.

It went on too early. Sauce that cooks for hours caramelizes, darkens, and can scorch. What's left tastes heavy and a little burnt.

Only the first one is about the bottle. The other two are about how you use it, and those are easy to fix.
Sweet vs. tangy: what KC sauce is supposed to taste like
Kansas City sauce is tomato-based, and it's meant to be sweet and tangy. The sweet side rounds out the smoke and salt from the rub. The tangy side, usually vinegar, keeps that sweetness from sitting flat on your tongue and cuts through the fat on ribs and pork shoulder. For a closer look at how our bottles compare, see Mild vs Hickory vs Spicy: BigShow KC BBQ Sauces Compared.
Start with KC Mild
If you want a KC sauce that tastes like Kansas City without the syrup, start with KC Mild BBQ Sauce.Mild is the sauce we use on our ribs at BBQ events. It's a sweet-tangy Kansas City profile with sweet tomato, slow-smoked depth, and a touch of vinegar zip. Heat is near zero, so it works for the whole table, kids included. What makes Mild a good pick for the "too sweet" crowd:

It leads with balance. The tang keeps the sweetness in check.

It doesn't need heat to be interesting. You taste the sauce and the meat, not chili burn.

It glazes clean. Brushed on thin at the end, it sets with a shine instead of puddling.

Mild comes in a 2-pack of 12 oz bottles. It contains mustard.
How to glaze without the syrup
This is where most "too sweet" ribs and chicken really go wrong. Good technique fixes most of it.1. Season first, sauce last. Let the rub do the heavy lifting during the cook. Sauce is the finish, not the foundation. 2. Wait for the bark to set. On ribs, touch the surface lightly. If the rub stays put and doesn't smear onto your finger, the bark has set and it's time to sauce. 3. Brush on the last 10–15 minutes. That's enough time for the sauce to tighten up and turn glossy, and not enough time for the sugars to burn or go gummy. 4. Go thin. Brush on a light coat. You should still see the bark through it. If you want more, add a second thin coat a few minutes later. Two thin coats beat one thick one every time. 5. Warm it first. Room-temperature or slightly warm sauce brushes on smoother and thinner than sauce straight from the fridge. 6. Rest before slicing. Give the meat a few minutes off the heat so the glaze sets and stays on. We go deeper on timing for both ribs and chicken in our late-glaze guide When to Sauce Ribs and Chicken: A Late-Glaze Guide.
Let the rub carry the savory side
Want even less sweetness on the plate? Change the rub as well as the sauce.KC Bold & Gold is our garlic-forward rub. Garlic leads, sugar doesn't. It's savory and herby with a mild touch of heat. Pair a Bold & Gold base with a thin finishing coat of Mild and you get a plate that tastes clearly savory, with the sauce adding a bit of sweet and tang at the end.For classic KC bark on ribs, KC Que is salty, sweet and savory. If you're cutting back on sauce sweetness, a lighter coat of Que plus a thin Mild glaze keeps things balanced. Not sure which rub fits which cook? Here's our rub guide for ribs, chicken, and veggies.
Or skip the glaze and serve it on the side
There's no rule that says sauce has to go on the meat. Plenty of good cooks serve ribs dry-rubbed and let everyone sauce their own at the table. You get full bark, and nobody gets more sweetness than they want.Set out a few ramekins and let people dip. We cover how to run it in Dry-Rub Ribs with Sauce on the Side, KC-Style.
Where Hickory and Honey Jalapeño fit

KC Hickory has the same KC sweet-and-tang backbone with a smoky hickory note. Kansas City BBQ Sauce That's Not Too Sweet: Sweet vs. Tangy, and How to Glaze Without the Syrup

If your sauce keeps burning, sliding off or turning gummy, the recipe probably isn't the problem. The timing is. Sauce has sugar in it, and sugar that sits over heat too long goes from glossy to bitter in a hurry. The fix is simple, and it's how we do it at the pit: season first, cook most of the way on rub alone, and brush the sauce on in the last 10–15 minutes, after the bark sets. Here's how that works on ribs and on chicken.
Why sauce goes on last
Sauce is a finish. It isn't a marinade, and it isn't a mop you keep slopping on all afternoon. Here's what happens when it goes on too early:

It scorches. Sugars darken past mahogany and head toward black.

It turns bitter. Burnt sugar tastes burnt, no matter how good the bottle was.

It softens the bark. Wet sauce on unset rub turns your crust into paste.

It hides your seasoning. You worked on that rub. Let people taste it.

When the sauce goes on late, it has just enough time to tighten into a shiny, tacky coat, and the rub underneath stays intact.
How to tell the bark has set
The bark is the seasoned crust that forms as the rub, smoke and surface of the meat cook together. Before you sauce, it needs to be firm enough to hold up.The touch test: lightly press the surface with a fingertip (or the back of a spoon if it's hot). If the rub stays put and doesn't smear, the bark has set. If it comes off on your finger or looks wet and pasty, give it more time. On ribs, the color should be a deep, even red-brown. On chicken, look for skin that has rendered and started to crisp.
Ribs: KC Mild in the last 10–15 minutes
KC Mild BBQ Sauce is the sauce we use on our ribs at BBQ events. It's sweet-tangy Kansas City with near-zero heat. It glazes clean and the whole table can eat it.The rib game plan:

Season with KC Que. Its salty-sweet-savory balance was made for pork bark. (Our rub guide covers prep, including the membrane and binder.)

Cook low and slow on rub alone until the ribs are close to tender and the bark has set.

Check doneness. Pick the rack up from one end with tongs. It should bend and the surface should start to crack, but it shouldn't break apart. You want ribs that are tender with a little bite, so the meat pulls cleanly from the bone when you bite it.

Glaze. Brush a thin coat of Mild over the top. Close the lid.

Second coat (optional). After about 5 minutes, brush on another thin layer if you want more shine.

Set and rest. Let the glaze tighten for the remainder of the 10–15 minutes, then pull the ribs and rest them a few minutes before slicing so the sauce stays on the meat instead of the cutting board.

Want smoke in the sauce for sandwiches or burnt ends? KC Hickory follows the same timing.
Chicken: Honey Jalapeño in the last 10–15 minutes
Honey Jalapeño Grilling Glaze is built for exactly this job. Honey comes first, then jalapeño warmth, with medium heat overall. It's a finishing glaze, not a mop sauce, and it gives you sticky sweet heat without mixing honey, peppers and sauce yourself. The chicken game plan:

Season with KC Bold & Gold (garlic-forward) or KC Que. Get some under the skin on thighs if you can.

Cook on rub alone until the chicken is a few minutes from done. Go by internal temperature, not color. Cook chicken to at least 165°F (USDA safe minimum). Thighs and drumsticks get more tender when you take them higher.

First thin coat of Honey Jalapeño in the last 10–15 minutes. Close the lid.

Second thin coat a few minutes later.

Watch the color. You want lacquered mahogany, not black.

Rest 5–10 minutes so the glaze sets.

We've got a full walkthrough with oven, grill and smoker notes in How to Glaze Chicken with BigShow Honey Jalapeño.Feeding a mixed crowd? Glaze half the tray with Honey Jalapeño and the other half with Mild. Spice fans and the "nothing hot, please" crowd both go home happy.
Oven, grill and smoker adjustments

Smoker: keep your normal cook temperature. Glaze once the bark has set (ribs) or the skin has rendered (chicken), and give it the last 10–15 minutes.

Grill: set up two zones. Cook mostly on the indirect side and glaze there too. Only slide over direct heat for a few seconds if you want a bit of char, and stay right there with it.

Oven: glaze in the last stretch of the cook. If you use the broiler to finish, give it a minute or two at most and don't walk away.

Five common glazing mistakes

Saucing at the start. It burns. Wait.

Glopping it on. Thick coats stay wet and taste heavy. Use thin coats, and two of them if you want more.

Cold sauce from the fridge. It brushes on thick and cools the surface. Let it come to room temp or warm it gently.

Double-dipping the brush. Pour what you need into a small bowl so the bottle stays clean.

Slicing right away. Give it a short rest so the glaze can set.

Save some for the table
Glazing doesn't mean you can't also sauce at the table. Put a ramekin each of Mild and Honey Jalapeño out for dunking, so anybody who wants more gets more and nobody burns a third coat on the fire. Some folks skip the glaze altogether and go dry-rub with sauce on the side. We cover that style in Dry-Rub Ribs with Sauce on the Side, KC-Style.
Stock the finish
The KC Complete Sauce Kit ($28) gives you KC Mild, Honey Jalapeño and KC Hickory in one box. When to Sauce Ribs and Chicken: A Late-Glaze Guide

Sauced or dry? People have argued about it at the pit for as long as there have been pits. Here's our take: you don't have to pick a side. Cook the ribs dry with a rub that can stand on its own, then put the sauce on the table and let everybody decide. You get full, crunchy bark on every bone. The person who wants sauce gets it, and the person who doesn't gets to taste the meat and the rub. And you only cook one way. Here's how we do it, Kansas City style.
Why dry rub with sauce on the side works

The bark stays the star. No wet sauce softening the crust you spent hours building.

Everyone gets their own level of sweet. The "KC sauce is too sweet" crowd can take a light dip or skip it.

One rack, many flavors. Three sauces on the table turn one cook into a tasting.

Less risk. No glaze on the fire means nothing to scorch at the end.

The catch is that the rub has to carry the flavor by itself. That's why choosing the rub matters most in this style.
Pick your rub: KC Que or Bold & Gold
KC Que is our classic KC bark rub, salty, sweet and savory, with mild heat. If you want ribs that taste like Kansas City before any sauce touches them, start here. It builds a deep red-brown crust over a long cook. KC Bold & Gold is our garlic-forward rub, with sweet garlic, herbs and spices, savory first. Garlic leads, sugar doesn't. Grab it for anyone who says they don't like sweet rubs, or when you want the ribs to lean savory and let the table sauce bring the sweet. Can't decide? Cook two racks. Season one with Que and one with Bold & Gold, and cook them side by side. It's the easiest way to find your house favorite, and guests love comparing. For more on matching rubs to proteins, see Which BigShow Rub for Ribs, Chicken, or Veggies?, and for general technique, How to Use Barbecue Rubs Effectively.
Seasoning the ribs

Trim and pat dry. Remove the membrane on the bone side if it's still on. Dry meat holds rub better.

Binder (optional). A thin smear of mustard or a light wipe of oil helps the rub stick. You won't taste it after the cook.

Season both sides evenly. Go generous but not caked on. You want an even coat you can still see the meat through, not rub mud. Hold the shaker up high for better coverage.

Let it sit. Give it 30–60 minutes on the counter while the cooker comes up to temp, or leave it uncovered in the fridge overnight for a drier surface and better bark.

A note on salt: KC Que is salty-sweet-savory by design. If you dry-brine your ribs with salt ahead of time, go lighter on the rub so you don't double up.
The cook
Run your smoker or oven low and slow, the way you normally do ribs. A few dry-rub-specific tips:

Leave the lid alone. Every peek costs heat and time. Let the bark form.

Spritz sparingly, if at all. A light spritz can help color, but too much washes rub off. If the surface looks dry in spots, that's usually fine.

Wrapping is your call. Wrapping can speed things up and push tenderness, but it softens bark. For dry-rub ribs, many cooks go unwrapped or wrap late and briefly. Unwrap with enough time left to firm the crust back up.

Optional finishing dust. Right before the ribs come off, a very light sprinkle of fresh rub adds a bright hit of seasoning on top of the bark.

Checking for done: tender with a bit of bite
Here's what you're after: ribs that are tender with a bit of bite. The meat should pull cleanly from the bone when you bite it, but the rack should still hold together when you slice it.The bend test: pick the rack up with tongs about a third of the way in from one end. If it bends easily and the bark starts to crack on top, it's ready. If it barely bends, give it more time. If it starts to tear apart, it went a bit long, but it'll still eat great. Rest the ribs for a few minutes, then slice between the bones.
Set the sauce board
Now the fun part. Put out three labeled ramekins from the KC Complete Sauce Kit:

KC Mild: classic. Sweet and tangy, not syrupy, with near-zero heat. This is the sauce we use on our ribs at BBQ events, and it's the one most of the table will reach for first.

Honey Jalapeño Grilling Glaze: sweet heat. Honey first, then jalapeño warmth. Warm it slightly and it works great as a dipping sauce.

KC Hickory: smoky.
